
Beef and Mango Soup - Serves 4
Stuff you’ll need:
- 40g fine egg dried noodles
- 2 Pouches Knorr Simply Stock Beef
- 2 mangoes, very firm
- 6 spring onions, very finely sliced
- Handful fresh coriander (stalks are fine here)
- Handful fresh mint
- 1 red pepper, de-seeded and diced
- 1 tomato, chopped
- Drizzle of sesame's oil
- 400g fillet beef, sliced into strips
- 85g fine green beans
- 2 limes, juice and zest
- 2 tbsp clear honey
- 2 tsp freshly grated ginger
- 1 tbsp fish sauce or soy sauce (optional)
- 2 tbsp toasted sesame oil
- 3 tbsp toasted sesame seeds
- Freshly ground black pepper
Get stuck in:
- 1. Bring the Knorr Simply Stock to the boil and place the noodles in until they are soft, approximately 3-4 minutes depending on the variety. Take off the heat and drain the noodles and retain the stock.
- 2. Peel the mangoes and then slice into fine strips. Tip into a bowl with the spring onions, red pepper, tomatoes and the cooked noodles.
- 3. Heat the sesame oil in a medium wok or non-stick frying pan. Fry the beef for 3-4 minutes or until browned, add the green beans and stir fry for a further minute. Drain any remaining fat and place the beef and beans with the noodles toss together.
- 4. In a pan, warm the lime juice, zest, honey, ginger, fish sauce and the remaining beef stock, coriander and mint.
- 5. Place the beef, and noodles mix into the serving bowls and ladle the warm soup over.
- 6. Sprinkle with the sesame seeds just before serving.
