Beef and Stout Casserole - Serves 4
- Preparation time: 25 minutes
- Cooking time: 1 hour 30 minutes
Stuff you'll need:
- 2 tablespoons olive oil
- 450g (1lb) lean stewing steak, cut into cubes
- 2 red onions, peeled and chopped
- 1 tablespoon plain flour
- 150ml (¼ pint) brown ale or stout
- 150ml (¼ pint) Knorr Simply Stock Beef
- 400g can tomatoes
- 1 red pepper, sliced
- 1 orange, rind and juice
Get stuck in:
- 1. Heat 1 tablespoon oil and fry the meat until browned. Remove to a casserole dish.
- 2. Heat remaining oil and sauté onion over low heat until golden brown. Mix in flour and gradually stir in ale, stock and tomatoes and cook until thickened. Add pepper and pour over meat in casserole.
- 3. Cook in a preheated oven 160 deg C, 325 deg F, Gas 3 for 1½ hours.
- 4. Stir in the orange rind and juice.
Cooks tip:
- 1. Delicious served as a pie – place cooked meat in pie dish and cover with ready made puff pastry.
